Cedar Planked Grouper Filet

Serves 4

INGREDIENTS

4 6-ounce filets grouper or other firm white fish

2 teaspoons butter, soft

Pinch of salt to taste

Pinch of pepper to taste

1 lime

4 sprigs cilantro

DIRECTIONS

1 Preheat the grill to medium and follow the directions on the grilling planks to prepare them for cooking.

2 Rub the fish filet generously with butter and season with salt and a tiny pinch of pepper.

3 Place onto the heated planks, close the grill lid, and cook for 7 to 12 minutes, depending on the thickness of your fish, or until it is opaque and just flakes in the center.

4 Serve with a squeeze of lime and fresh cilantro.
